Salmon with Fusilli Veggie Pasta

Close your eyes and imagine grilled salmon with a side of fusilli pasta tossed in fresh, delicious vegetables.  Mmmm… who could resist?  I originally tried this meal at my parents’ house a while back, and recently rediscovered it while on a quest for quick and healthier meals.  Salmon with Fusilli Veggie Pasta is flavorful and light on calories, so it’s perfect to toss together for dinner whether you’re dining with family or friends, or keeping it all to yourself!  This dish is healthy, delicious, quick, and most of all easy!  Hey, who said healthy food wasn’t yummy AND fun?  #ChewRight, my friends!

Ingredients
  1. 4 center cut Organic Alaskan Salmon
  2. 1 bag of Trader Joe's Organic "Brown Rice & Quinoa" Fusilli Pasta
  3. 3 medium tomatoes, roughly chopped
  4. 4 cloves garlic, roughly chopped
  5. 1 tbsp Extra Virgin Olive Oil (EVOO)
  6. 1 large handful of fresh kale, chopped
  7. 1 large handful of fresh collard greens, chopped
  8. 1 celery stalk
  9. 1/4 of a bell pepper
  10. 1 cup of bella mushrooms, chopped
  11. 1 jalapeno
  12. salt and pepper to taste
  13. 1 tsp of Lowry's Season Salt
Salmon Rub
  1. 1/4 tsp of ginger powder
  2. 1/4 tsp of garlic powder
  3. 1/4 tsp of paprika
  4. pinch of salt and pepper
Salmon Veggie Garnish
  1. 1/2 onion, chopped
  2. 1 jalapeno, roughly chopped
  3. 1 sprig of fresh rosemary
  4. 1 green onion, roughly chopped
Fusilli
  1. Cook pasta 'till al dente
  2. Put tomatoes and garlic in food processor and blend until smooth
  3. Add contents to sauce pan on medium heat
  4. Add 1/2 tbsp of EVOO
  5. Add chopped veggies to sauce and stir
  6. Drain pasta and add to sauce, season and stir
  7. Reduce heat to low and cover
Salmon
  1. Season both sides of Salmon with dry-rub
  2. In a warm skillet add 1/2 tbls of EVOO
  3. Place pieces of salmon in skillet
  4. Cook each side until done
  5. Garnish with onion, jalapeno, rosemary and green onion
  6. Serve
Notes
  1. Don't like heat? You can 86 the jalapeno pepper
